Mad Annie's Caribbean Ginger Sauce
In today's competitive food sauce marketplace, it's a rarity to find an individual making and marketing their own creation.
Most bottled sauces come from companies operating under "corporate umbrellas". But Annie Kline of Yachats, Oregon is an exception.
She's the owner, manufacturer, and chef of "Mad Annie's Caribbean Ginger Sauce".
It is Cooked and prepared in Mad Annie's Kitchen, licensed by the Oregon Department of Agriculture as a "Food Processing Establishment", she makes about 15 to 25 gallons at a time, packages it, and then it's off to market.
Her entry into the commercial sauce market came after she had spent time living in San Pedro, an island off the coast of Belize in Central America.
After returning to Oregon, she was invited to a potluck and cooked up her own version of a sauce she had tasted on San Pedro. It turned into such a hit that friends kept asking her to make them some.
"It was a snowball effect." she says. "I just kept getting more and more requests for it. At the time. I was running a T-shirt shop but with the sauce taking off. " I phased the T-Shirts out."
"The sauce is really the result of experimentation, some of this, some of that, until I found the right combinations."
